These Pancake Muffins are so delicious and so fun to make! If you are a busy family and don’t have time for a sit down breakfast, than this is the recipe for you! These Pancake Muffins are so delightful for those tastebuds and your family will thank you! It’s so rewarding to serve your family to such a yummy breakfast treat. Make ahead of time so they are fresh out of the oven or store in the fridge and warm them up the next morning. Serve them with butter & syrup or nothing at all. You’re gonna love it!

For my Delicious Pancake Muffin Toppings, I chose Bananas, Blueberries, Apples, Pecans, Cinnamon & Sugar, Strawberries, Bacon & Chocolate Chips.

Seriously, this recipe is so easy, there’s no way to mess this up! All you need is your favorite toppings, Pancake Mix, an Egg, Brown Sugar, Cinnamon & Sugar, Maple Syrup(optional), Mashed Banana, Vanilla & Milk… see recipe below to print and try it out yourself!

How did I make these?

In a bowl, I added 2 cups of Pancake Mix, I used Aunt Jemima Original, 1 egg, 1/3 cup Brown Sugar, 1/3 cup of Maple Syrup, 1 mashed Banana, 1 tsp. Ground Cinnamon, 1 tsp. Vanilla & 1 cup of Milk, then mixed well. Since I’m using a variety of toppings for my muffins, I’m not going to add any toppings to the batter until the batter is poured into the muffin pan.

Now just a note: if you choose to only use one topping for your muffins, make it easy on yourself and add your topping(s) into the bowl with your batter mixture.

Now spray the cupcake pan with a light non stick baking spray. You may use cupcake liners if you choose. Then, using an ice cream scoop I filled the cupcake pan with the pancake muffin batter. Fill them 1/2 to 3/4 full. Leave room for those delicious toppings!

Bake in heated oven of 350℉ for 25 minutes. Let cool 5 minutes, then Grab One, Two or more & your ready for Breakfast on the Go!!

These Pancake Muffins are so delicious and perfect for a Breakfast on the Go. Try tasty toppings such as Blueberry, Banana, Strawberry & Chocolate Chips with your Pancake Muffins, or mix in them all! Yummmm!!
  • 2 Cups Pancake Mix (Any Brand)
  • 1 Egg
  • ⅓ Cup Brown Sugar
  • 1 Mashed Banana
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Vanilla
  • ⅓ Cup Maple Syrup
  • 1 Cup Milk
  • Your Favorite Toppings
  1. Mix well, Pancake mix, egg, brown sugar, mashed banana, cinnamon, vanilla, maple & milk.
  2. Spray muffin pan with non stick spray. Fill muffin cups ½ to ¾ full with pancake batter and top with your favorite toppings. Place in heated oven of 350 degrees F for 25 minutes. Let cool 5 Minutes. Enjoy!
